easy, healthy, decadent banana pancakes

I don't think i've ever been so excited to upload a recipe. And when i say that i mean, i made this recipe for the first time yesterday, couldn't stop thinking about it, made it again today (perfected it), demolished it, and now here i am typing.
Pancakes are one of those things that are always pretty easy to make, yet can be so hit or miss - especially when they're gluten, dairy, oil and refined sugar free. These are super light and easy to digest, healthy and delicious (can you tell i'm proud yet?)
I've kept the ingredients minimal and to things most people would already have at home.
These quantities serve two people, or one hungry person!
Put everything except the baking powder into a NutriBullet or blender (the secret to them being fluffy). Blend. Then add your baking powder and pulse quickly just until mixed through (don't want to over mix)
Heat a pan for 5 mins - I use a good quality non stick one so didn't need oil or butter to cook. Pour in mixture and wait for pancake to bubble around the edges. Flip, and cook on other side for another few minutes. Repeat until you have used all of your mix.
My favourite toppings are, figs, bananas, yoghurt and almond butter but you can serve with literally anything you like!
